4.6 Lydia Larson "Fantastic Fajitas"

Have you ever wondered how to make sizzling steak fajitas at home? This is how you do it!

As with all good recipes, it all comes down to your ingredients. Make sure to add all these items for your list so you can make the best fajitas:

Ingredients: 
1/2 c. Olive oil 
Taco Bell or McCormick Fajita Seasoning packet 
1 whole lemon 
Dash of Salt
Boneless skinless chicken breasts - 2 - 3 
3 bell peppers, thinly sliced
1 large onion, thinly sliced
Tortillas, for serving
Optional: shredded cheddar cheese or Mexican flavored shredded cheese

After you have your ingredients it’s important to follow these steps for fantastic fajitas!

Directions: 
  • Mix together the olive oil, lemon, salt and seasoning in a small bowl, about 30 minutes before you’re ready to start cooking. 
  • Remove the chicken from the refrigerator, cut it into thin strips (1/4 - 1/2 inch thick) and season it, using about half the mixture you just made.
  • In this time, cut up the peppers and onions and soak them in the rest of the mixture you created.
  • After 30 minutes heat up 2 skillets to medium heat on your stove, adding a little olive oil to each. 
  • Once the pans are warm, put the chicken in one and the vegetables in the other. Stir with a spatula as the pans cook. Cover the vegetables with a glass cover to help soften the veggies as they cook.
  • When you think the chicken is done cut a piece open with a knife. When white all the way through, pick out chicken and add to veggie pan. 
  • Place several tortillas on a plate and warm in microwave (30 seconds) and put on plate, ready to serve. 
  • Optional: add cheese (amount you like) to the vegetable pan. Let heat up for about 1 minute, just til cheese is melty. 
  • Open tortillas and fill with fajita mixture. 
  • Add any salsa or guacamole, as you see fit.

If I could give any advice, I'd maybe bullet point the ingredients so it feels like a list, and then number the steps so it looks more like a process to follow in order. Otherwise everything is laid out very nicely and the bold headlines highlight each section well!
