Why I want to visit Iceland

When I tell people that Iceland is my dream vacation, I always get asked why, as Iceland is not typically on someones bucket list to visit. I love the outdoors, that's where I feel free. Iceland has the most beautiful landscape. From waterfalls, volcanoes, mountains, glaciers and ice caves.

If you like the outdoors and adventure, Iceland had a lot to offer. From Nature Reserve's, Ice caves and parks, to Blue Lagoon's and Northern Lights. It is a beautiful country with something for everyone.

6.7 An Amazing Roman Holiday: Circa 2019

I love it when two of my passions collide….movies and history. When I first watched the 1953 movie Roman Holiday on Turner Movie Classics with Audrey Hepburn and Gregory Peck, I fell in love with romantic comedies. The fascinating architecture, art, and culture depicted in the movie tapped my natural curiosity about the world around me.

Thinking about people who lived before me and how they were able to live without modern technologies I enjoy every day. You know….running water, indoor plumbing, HVAC system, Amazon.

One of the most enthralling periods of time for me is the first century. Specifically living under the control of the Roman Empire, one of the top five most powerful empires in the world. The vastest of their territory…much of Europe, Western Asian, Middle East, and Northern Africa… created a cornucopia of diversity.

Rome was the epicenter of power and control, and the city I would love to travel to if money was no object. There is so much to see and do, but here are my top five.

1. The Colosseum

The Colosseum also called Flavian Amphitheater
The Colosseum was as popular to the Romans as Lambeau Field is to Wisconsinites. It was a place for theatrical performances, festivals, circuses, and gladiator games.

Finished in 80 AD by Emperor Titus, it has survived damage by fire, earthquake, and neglect, and is the largest structure surviving from ancient Rome.


2. Vatican City and St. Peter’s Basilica

One of the most revered locations of Christians around the world and the seat of the Catholic Church. The Vatican City is an independent city-state ruled by the papal court and defended by the famous Swiss Guard.

Construction for St. Peter’s Basilica began over St. Peter’s grave by Emperor Constantine I in 324 AD, but the basilica you see today was the result of attacks by Saracen pirates and construction projects by various popes.

You will be in awe of the talent of Michelangelo as you gaze on the ceiling of the Sistine Chapel and inspired when you view a treasure trove of classical and historical artwork in the Vatican Museums.  


3. Roman Forum

The Roman Forum
The Roman Forum was the center of religious, political and social activities in ancient Rome. Want-to-be politicians made political speeches of empty promises, shook hands, and kissed babies along the streets of the forum (now we know where our current-day politicians got their playbook).

Make sure you have your walking shoes on, this historic site is over two football fields in length and over three football fields in width. But this walking tour will reward you as you observed the number of gods the Romans worshipped.

Ancient Romans visited and sacrificed at the Temple of Saturn to ensure a bountiful harvest, the Temple of Vesta to guarantee good hearth, home and family, and the Temple of Castor and Pollus taught young Roman males about the victory at Lake Regillus.

As you tour the ruins, try to find the spot where Julius Caesar was assassinated by the Senate (hint: look for the “Curia”).

4. Trevi Fountain

Located in the Quirinal district of Rome, the Trevi Fountain is one of the most beautiful fountains in the world. It was built over an Aqua Virgo, an aqueduct constructed in 19 BC by the son-in-law of Emperor Augustus, to bring water into Rome from the Salone Springs.

As one of the oldest water sources in Rome, the Trevi Fountain is home to one of the most popular rituals of all tourists. That’s right. With your back to the fountain, toss a coin into the fountain’s water basin with your right hand over your left shoulder. By doing so, legend has it, you will return to Rome one day.


5. The Pantheon

The Pantheon is an ancient Roman temple dedicated to “All of the Gods” and one of the best-preserved monuments of the time.

It was constructed around 25 BC by Marcus Vipsanius Agrippa to celebrate Emperor Augustus’ victory over Anthony and Cleopatra in Egypt.

Many famous monuments all over the world modeled the design of the Pantheon. The US Capitol Building and the Jefferson Memorial in Washington D.C. is two just two of the many.

There are so many great spots to explore when in Rome.

New Zealand: Where All Your Vacation Dreams Come True 
New Zealand is at the top of my travel list, because there is so much to do and see. NZ is the perfect blend of culture and breathtaking outdoor adventures. While the flight to Auckland is long and daunting, what awaits is worth the 21 hours of flying. 

This spectacular landscape is split into the North and South islands. Both islands are known for their pure lakes, lustrous forests and high planes.

"It's so simple, but everyone loves my Taco Dip!"


It never fails, I call and ask what I should bring to a family function and they always want my Taco dip. I can't remember where I got the recipe from, or why it's so popular, it's such a simple recipe. 


Main Ingredients

There are only three main ingredients to my Taco dip. 

  1. 8oz cream cheese
  2. 16oz sour cream
  3. one packet of taco seasoning
Preparing the dip
  1. Combine the cream cheese and sour cream in a large mixing bowl
  2. Mix until smooth (An electric mixer works best)
  3. Fold in the packet of taco seasoning. 
  4. After adding the seasoning, pour the mixture into a 9x12 cake pan
Toppings

It's really up to you what you want for topping. When I make it I have to make two pans as I have a couple picky siblings. Here are the toppings that I usually add to my dip:

  • Lettuce
  • Tomatoes
  • Green onions
  • Shredded cheese (I use cheddar) 
  • Black olives

Have you ever sat and wondered, "Why me?"




For me, growing up on a farm was a blessing. But one summer day in 1997, that blessing would turn into a curse. 

Farm life is hard work and a lot of responsibility. The early mornings and long days can make you question why you choose this lifestyle. For me, it was not a choice, but I'm glad I grew up on a farm. When you life this type of life, you learn hard work, discipline, responsibility and how to work for what you want. 

I am one of five children and was always the one that wanted to be outside helping on the farm. Everything from milking cow, bailing hay or even just feeding the barn cats. You could always find me outside doing something. I loved the farm life, but that love would soon fade one beautiful summer day. 

June 6th, 1997 is a day I will always remember, even though I wish I could forget it. As usual, I was helping my dad with chores. It was a beautiful summer day. I was having a great summer being that it was the summer before my senior year of high school. My dad was in the barn feeding the cows. I heading outside to get another wheelbarrow of feed for the cows, something I have done hundreds of times. 

I've had the same routine for years. I set the wheelbarrow next to the feeder wagon, went to the back of the tractor to turn on the wagon. I'm not sure what went wrong this time, all I knew was that in a split second, my life would change forever. 

I was 17 years old, in the prime of my life, doing what I loved. I walked to the back of the tractor, pulled the lever up, turned around and then it happened. My shirt got caught in the PTO (power take off) of the feeder wagon. The PTO is about a 4 foot long steel shaft that runs the gears on the feeder wagon, it spins very fast. The next thing I knew, my right leg was wrapped completely around the PTO. I was about to die. Somehow, by the grace of god, the tractor shut off, but the damage was already done. 

My dad came running out of the barn in a panic, my mom and my two younger sisters just happened to show up right after it happened. My parents were frantic, trying to figure out what to do as I sat there, still attached to the tractor, going into shock and bleeding profusely. 

My dad covered me with his shirt as my mom ran to the house to call an ambulance. After a few minutes, I started to loss consciousness. My mom was not going to come to the farm that day, but something told her to stop out there. Within about 20 minutes, a helicopter showed up to airlift me to the hospital. I don't remember the ride there or anything else for the next week as I was put into a medically induced coma. 

When I woke up a week later, I already knew my leg was gone. I would spend the next month in the hospital and I would have a total of 12 surgeries and a large skin graft to reconstruct what was left of my leg. I then spend the next year recovering and going through physical therapy to learn how to walk again with a prosthesis. 

The support that I received from my family and friends was amazing. There was someone with me day and night, everyday. You really never know how many great people you have in your life until something tragic happens. Without them, I know I would not have made it through that entire ordeal. 

It's been 22 years, and I still remember it like it was yesterday and I still wonder, why me? What's crazy is that most days, I don't even think about it. I still have pain almost everyday and sometimes for no reason, I replay the accident in my head as I remember everything. I will never know why that had to happen to me, but the one thing I do know is that I survived.

I wish everyday that I could be like most other people in the world. I struggle to do a lot of things that most people don't think twice about like walking more then a few blocks, or hiking in the woods. Of course I wish this never happened to me, but in a way, I feel like it has made me the strong, determined women I am today. Going through what I went through really makes you put life in perspective and you learn real quickly not to take even one minuet in life for granted.

4.6 Jaylin - "Stir Fried Sausages"

Stir Fried Sausages


I remember my mom and dad would always make this dish for my sisters and I since we were little. It's sausages cut up into bite sized pieces with green onions and Cilantro. The dish is great for potlucks and there's always not enough of it going around. This recipe feeds about five people.

What You're Going to Need:

  • 12 Brat Sausages
  • 6 Green Onions
  • Small bundle of Cilantro
  • 2 bowls
  • Cutting board
  • Knife
  • Pan
  • Wooden Spoon

Directions:

  1. Cut the brats into 1 to 2-inch slices. After cutting, put into one of the bowls to sit.
  2. If you're making this for a crowd, use another cutting board and knife (or wash the one you're using) for the green onions and cilantro. 
  3. Take the green onions and cut off the rooted ends. Toss them away. Cut the rest of the green onions into fairly small sized pieces. 
  4. After you're done cutting, put green onions into other bowl.
  5. Take the small bundle of cilantro and cut it up into small pieces.
  6. Put cilantro in with the green onions.
  7. Take bowls over to cooking area and turn on the stove to about high, high-medium. Let the pan warm up.
  8. Put in sausages and stir occasionally with wooden spoon. You're looking for the sausages to go from a raw red-gray color to a gray-brown color. 
  9. After sausages have browned, put in the green onions and cilantro.
  10. Give the green onions and cilantro about 1 to 2 minutes. You want a soft texture for an easy bite. After 1 to 2 minutes shut off stove and you're done!
Stir Fried Sausages is a great dish that can go with rice! The juices are soaked up with the rice that allow for a nice bite!

Bring Thailand into your kitchen with a little help from Amazon and this easy Panang chicken curry recipe.

Thai food is fun and vibrant with roots in Chinese, Indian and European cultures. A unique blend of flavors featuring spicy, sweet, sour and salty make Thai cuisine unforgettable and addicting. Thai food can be complex and recipes time consuming but modern cooks use curry pastes which allow even the most novice cooks to make delicious dishes packed with exotic flavors.

To keep things authentic, I recommend using Jasmine rice. The grains are medium-sized, firm and aren’t too sticky. It’s versatile and aromatic. If you have never had this beautifully fragrant rice before, I’m sure you will find it a pleasant change from long grain.

This recipe is easy because it’s all about portions and I’m sure after you make it the first time, you’ll find yourself putting your twist on it. The recipe calls for a total of 3 cups of vegetables so feel free to have fun and get creative with choosing your vegetable blend.

Easy Panang Chicken Curry & Rice Recipe


Panang curry is a popular, spicy dish that features a coconut milk-based sauce and it’s a hit with lovers of spicy food. The sauce is so tasty you might be tempted to lick the bowl but keep in mind that the more curry paste you use, the spicier it will be. 

Enjoy bringing the exotic tastes of Thailand into your Midwest kitchen-the spice lovers in your circle with adore this dish!

Ingredients

  • 1 cup Jasmine rice
  • 1 ⅓ cup water 
  • ½ lb chicken, cut into strips 
  • coconut oil
  • 1 15 ½ oz can coconut milk
  • 1 tablespoon curry paste
  • 1 tablespoon white sugar
  • 3 cups of vegetables, cut into strips

Directions

In a medium pot, boil water and rice over high heat and cover with lid. Reduce heat to low and simmer. Watch for the water to be absorbed, usually about 10-15 minutes, and turn the heat off once the water is gone. Set pot aside leaving the lid on top.

In a large pan, heat coconut oil over medium-high heat. Coat the pan with the oil and add the chicken to the pan cooking the chicken until no longer pink. Set aside.

Add coconut milk to the same pan you cooked the chicken in, blend in curry paste and sugar. Once mixed, add chicken and vegetables back into the pan and cook over medium heat until vegetables are cooked to your liking.

Tips for serving Thai food:

  • Thai folks do not use chopsticks so to be authentic and respectful of Thai culture, give each diner a spoon and fork for their place setting.
  • Thai food is served family-style with rice being the starting point. Serve diners a serving of rice to their preference in a large bowl and then allow them to serve themselves the curry.
  • Offer sriracha as a condiment and let your guests turn up the heat! 


3.5 StacyShealey The Day America Fell from the Sky




The day domestic American planes fell out of the sky and hit the tallest buildings in the country ended up being the day that would be impossible for me to forget. 

On September 11, 2001, Americans were taken by surprise when four airplanes were hijacked by members of al-Queda, one of the most feared terroristic organizations in the world. That morning, almost 3,000 people lost their lives in the most deadly terror attack on US soil. Two airplanes hit the World Trade Center buildings in New York City which caused the structures of the buildings to melt. The two buildings crumbled to the ground and enveloped the streets of New York City in dust and debris. The Pentagon in Washington DC was also hit by an airplane leaving a large gaping hole in the side of the building. The  fourth plane crashed in Pennsylvania. The brave passengers and members of the flight crew took the risk of fighting the hijackers which caused the plane to nose dive into the ground before the hijackers could make it to the intended target. 

After the surprise attack, the president, George W. Bush said, "Today, our nation saw evil -- the very worst of human nature -- and we responded with the best of America. With the daring of our rescue workers, with the caring for strangers and neighbors who came to give blood and help in any way they could." 

The immediate aftermath of the World Trade Center buildings was caught on live television as local and national news teams went on location to catch the story. People across the US watched the buildings burn and witnessed the horror as people on New York City streets tried to make sense of what had happened. People were looking up into the sky trying to figure out why the airplanes had hit the two buildings. The chaos was evident as people started to jump out of the burning skyscrapers.

The entire nation was shut down as the country as a security measure and  we waited to find out who was behind the hijackings and the total death toll. With an estimated 50,000 people working in the World Trade Centers on an average weekday, it was unimaginable that the death toll was not higher. Some people expected war to break out. Everyone was on edge.

The immediate response from Americans in New York was to show solidarity by volunteering in rescue efforts but for those who did not live near the locations of the attacks their response was to spend time with family and friends. Many people started going back to church and even more people bought American flags to display on their homes and cars. People realized the value of their time as we heard stories of those who were killed in the attacks attempting to call their loved ones before passing.

“It was the worst day we have ever seen but it brought out the best in all of us,” John Kerry said in response to how Americans were able to pull together after the tragedy.

Memorials for 9/11 are held every year in commemoration of the innocent and brave people who lost their lives on the day of the attack. The site of the attack in New York City became known as Ground Zero. Memorials have also been held for the rescuers, police officers and firefighters who would later lose their lives to diminishing health caused by exposure to the debris found at Ground Zero. 

This year comedian, Jon Stewart, broke down emotionally before Congress in an attempt to advocate for funding to help 9/11 rescuers with their health. Since the attack, another 241 Americans who were rescuers have died.

9/11 will forever be remembered as a day America was torn apart by terrorism.

4.6 Shelby- Homemade chicken pot pie

One of my relatives once made our family a homemade pot pie. It was so delicious that I knew I had to cook it myself since he lives in Texas and wont be able to cook it as often as I liked. The pop pie had pie crust, chicken, corn, carrots and some beans in it. Here is how you make the perfect pot pie!

Preparation for the pot pie. Here are a list of things that you will need to make this pot pie perfect:
  • Pie pan
  • Rolling pin
  • An oven
  • Mixing bowl
  • Spoon
Ingredients:
  • Chicken
  • Bag of mixed veggies
  • Two cans of cream of chicken 
  • Two pie crusts
Steps to making the perfect pot pie
1. Preheat the oven on bake to 400 degrees.
2. Roll out the pie crust and place it into a pie pan
3. Peel the chicken into small pieces
4. Mix the ingredients together which are chicken, bag of veggies, and two cans of cream of chicken 
5. Place the mixed ingredients on top of the pie crust in the bowl
6. Put another layer of pie crust on the top and bind the two crusts together
7. Place into the over for 45 min
8. Enjoy!

4.6 Robin ~ Charcuterie: Give Your Table the WOW Factor!


One of my favorite meals is sure to remind you of the scene in Ratatouille when fireworks blast off as he tastes cheese and a strawberry together for the first time…a Charcuterie plate and wine. Charcuterie is the culinary art of preserving meat when refrigeration was unheard of. It is easy, there is no rules, and you get it right every time!

Your first stop will be to your local wine or liquor store. Pick out your favorite wine or ask the wine expert at the store for recommendations. Most wine labels will provide recommendations on the type of food that is best to enjoy with the wine, but I say, drink what you like.

Your next stop will be to your local grocery or specialty store. Check out the refrigerated cases in the deli to find specialty cured meats and higher quality cheeses. For your guests who is not familiar with cured meats, you can pick up deli meat. Ask your friendly deli person to slice it thin.

Pick up some nuts, dried or fresh fruit, a hardy loaf of bread and viola you have the makings of a charcuterie plate. Choose what looks amazing, put it on a board, and get ready to hear oh’s and ah’s as you set it on the table.

Ingredients:
Cured Meats:
Prosciutto, mortadella, pancetta, pepperoni, liverwurst, soppressata, speck, bacon or pancetta

Deli Meats:
Ham, turkey, roast beef or summer sausage

Cheeses:
I love soft cheese because they are easy to spread on bread or crackers. I then add a piece of fruit, fruit spread or cured meat for the perfect bite.

Soft cheeses such as brie, camembert, Neufchatel, gorgonzola, feta, goat cheese, ricotta, mozzarella or fontina are some excellent examples.

Hard cheeses stand up to full-bodied wines like Chardonnay and Cabernet Sauvignon and are absolutely delicious with meat or fruit. One of my favorites is Manchego from Spain made with sheep milk. It has a crumbly, buttery texture with a slightly salty finish and pairs well with Chardonnay.

Other hard cheese to try are Pecorino Romano, Parmigiano-Reggiano, Gouda, Provolone, Emmental, and Cheddar.

Use a variety of milk types to stretch your palate.

Fruits and Veggies:
Fresh: Grapes, apples, pears, strawberries, blueberries, blackberries, raspberries

Dried: Apricots, cherries, mangos, prunes, dates, cranberries, raisins

Bread and Crackers:
French baguette, rustic wheat, sourdough, rye, focaccia, thin pretzel crisps, Ritz, Club crackers, water biscuits

If you have a gluten allergy, no worries. There are excellent choices of gluten-free bread and crackers on the market. Stroll on over to the natural products aisle of your favorite grocery store.

Olives, Pickles, and Nuts:
Green olives, black olives, Kalamata, kosher dill pickles, cornichons or gherkins pickles, almonds, cashews, walnuts, hazelnuts, pistachio

Some higher end grocery stores will have olives, pickled garlic, mushrooms and other items in a self-serve food bar near the deli. Create your own mix. Be care, some olives will still have their pits in it. No need to have to see your dentist for a broken tooth.

Spreads, Oils & Vinegar:
Sweet and savory spreads and chutneys are perfect with soft and hard cheeses. Fig, berries, cherries, onion, and pepper are great options.

Pick an extra virgin olive oil (EVOO) for dipping your bread. EVOO is the purest and most delicately flavored of all types of olive oil. It’s not meant for cooking, it’s meant to be tasted. Look at the top shelf of the oil section of your grocery store. The tall, skinny bottles from Spain, Italy or Greece are the ones to reach for. They are a bit pricier than cooking olive oil but are worth it.

Balsamic vinegar is a great addition to your charcuterie plate and your diet. Health levels of calcium, iron, magnesium, and potassium will make your mom and doctor happy.


As you can see the combinations of a charcuterie plate are limitless. Your imagination and interest in trying something new is your only limitation. Make your dinner table and this holiday season fun. Cheers!

4.6 Emily "Cooking with Fire: Pizza Recipe For Your Backyard Dinner"

One of my favorite things about camping is getting to cook meals over the fire. It feels to me like a primitive art form that has been lost to our modern conveniences. The smell of woodsmoke and the flavor it brings into the food is second to none. I won't deny that cooking in this manner is time-consuming, but so worth the result if your willing to put in the effort. Here is the method and recipe for one of my favorite meals over the fire, pizza.

Preparation

Cooking over fire takes some serious time to organize. You must have the proper tools and equipment to get a successful result.
These are some essential items that I deem necessary:
  •  Firepit with grate
  • Coal poker
  • 12" cast iron skillet
  • Aluminum Foil
  • Dry Wood
The first item of business is to start your fire. I like to start it a least 1-1.5 hours before I begin cooking. This ensures that the fire will have burned down and created a nice bed of coals to cook over. A proper fire temperature is key otherwise your food will be burned to a crisp in a matter of minutes. While your fire is burning, you can start assembling the pizza recipe.

Recipe

I like to make my own crust from scratch, but you can certainly substitute a pre-made crust to your liking. 

Crust:
1 tsp. salt
1 tsp. sugar
1 T. active dry yeast
1 T. oil
1 c. warm water
Mix ingredients together until yeast is dissolved, begin to add flour until dough is no longer sticky. 
Oil the cast iron skillet and press the dough into the bottom. Choose your favorite pizza sauce and smother the crust. Layer your pizza with any additional toppings you choose. I've listed a few of my favorites below.

Toppings:
  • Pepperoni
  • Spicy sausage
  • Fresh basil
  • Spinach
  • Oregano
  • Bell peppers
  • Banana peppers
  • Goat cheese
  • Onions
  • Fresh jalapenos
  • Kalamata olives
Cooking Process

1. Once your pizza is assembled, cover the cast iron skillet with aluminum foil. This helps trap the heat in so that the pizza cooks evenly. 
2. Place the pizza on the grate over the fire. Make sure not to place the pan over the hottest part, indirect heat is better. Use coal poker to spread out the coals if needed. 
3. Make sure to turn the pan every few minutes to help all sides of the pizza cook evenly. 
4. Peek under the tin foil every few minutes to make sure that the top of the pizza is cooking thoroughly. If not, place some hot coals on top of the foil to help trap heat. 
5. After approximately 30 minutes the pizza should be fully cooked and ready to eat. The crust of the pizza should be dark, but not burned, with cheese that is completely melted. 
6. Remove from pan, cut and enjoy!

Just Like Grandma Used to Make: An Easy, Fast, and Delicious Taco Salad Recipe 
Some of us may remember our relatives or grandparents cooking us very good food when we were younger.  Whether it's that familiar Thanksgiving or holiday season smell of food, we can always look fondly on that one particular recipe we always wanted.  My grandma had a taco salad recipe that was always delicious and stood out from the others I had growing up.  Before she passed away, she gave the recipe to my family and we kept the family tradition of this meal going for her.  If you have the correct amount of certain ingredients, you can prepare this taco salad in about 10 minutes!

The 10 Ingredients You Need for this Quick and Easy Meal
This taco salad recipe uses just 10 ingredients you can find at any grocery store.


  • Two lbs of ground beef chuck
  • Bag of taco blend shredded cheese
  • Full 8 oz. container of Daisy sour cream
  • Three-quarters of a bottle of Kraft 1000 Island dressing
  • Full head of iceberg lettuce
  • Bag of family size Nacho Cheese Doritos
  • Two Jalapeno peppers
  • One red onion
  • One can of black beans
  • One tomato 

The 12 Steps to Prepare the Meal 
Once you have the ingredients ready, you are now ready to start cooking and preparing the meal!

  1. Cook two lbs of the ground beef chuck until it's all brown with no signs of pink or red color.
  2. Empty bag of taco blend shredded cheese into a large pot or mixing bowl.
  3. Empty full 8 oz. container of Daisy sour cream into a large pot or mixing bowl.
  4. Empty about three-quarters of a bottle of Kraft 1000 Island dressing into a large pot or mixing bowl.
  5. Chop up a full head of iceberg lettuce and empty it into a large pot or mixing bowl.
  6. Crumple up a bag family size Nacho Cheese Doritos empty it into a large pot or mixing bowl.
  7. Dice chop two Jalapeno peppers and empty it into a large pot or mixing bowl.
  8. Finely dice one red onion and empty it into a large pot or mixing bowl.
  9. Thoroughly drain a can of black beans and empty it into a large pot or mixing bowl.
  10. Finely dice a tomato and empty it into a large pot or mixing bowl.
  11. Empty cooked taco beef into the large pot or mixing bowl that the other ingredients have been placed.
  12. Thoroughly stir the contents you have mixed together.  You are now ready to serve your meal!

4.6 Alexandra "Not your Average Mac and Cheese"



How We Discovered Something Delicious


When our mother took us to the pumpkin patch as young children we always ventured to a new patch every year. This is when we lived in North Carolina while our father was away in the Marines. Our mother took it upon herself to load the three of us kids up and whisked us away to a pumpkin patch that promised a petting zoo and more. 


Upon arrival It was evident this patch had much to offer, not only did it have a field which looked endless covered in large pumpkins, it contained:
  • Two shop areas
  • Petting zoo
  • Playground equipment
  • A renovated barn that said the restaurant


 After about an hour of pure childlike bliss running across the offering of the patch, we decided to give the restaurant a shot. 


Arriving into a Hidden Food Wonderland


Walking into this establishment my mouth instantly watered. It was as if your grandma had been busy in the kitchen all day and the oven was warming the house it felt beyond cozy and smelled so good. 


We were welcomed to a table and given fresh homemade buns of two different flavors with fresh whipped butter. There was no menu they just started bringing you bowls of fabulous food.  


Fresh, Warm, Deliciously Different


When the food came out to the table I dug in and ate everything except the funky looking mac and cheese. I was not interested in something so different in appearance from my normal boxed mac and cheese. It wasn't until my siblings and mother dug into it and started gushing over the mac and cheese that I finally tried it.


It. Was. INCREDIBLE


When we were moving to Wisconsin after being loyal customers for a few years after that divine day of discovery, one of the cooks folded up a note and shoved it in an envelope, then handed it off to my mother. Asking her to swear not to give it to any restaurants and only to share with friends and family. 


So What's in it?


To create this fantastic dish you only need these few items. 


  • 2 cups dry macaroni
  • 1 cup sour cream
  • 1 cup mayonnaise
  • 2 cups shredded sharp cheddar
  • 2 cups shredded mild cheddar
  • Crushed Ritz (or cheddar Ritz) crackers

Now, what to do?

  1. Boil macaroni as directed.  Rinse with cold water.
  2. Combine macaroni, mayo, sour cream and cheeses.
  3. Spoon into a lightly greased baking pan
  4. Cover with crushed crackers
  5. Bake at 325 for 30 to 35 minutes (uncovered)

4.6 Lydia Larson "Fantastic Fajitas"

Have you ever wondered how to make sizzling steak fajitas at home? This is how you do it!

As with all good recipes, it all comes down to your ingredients. Make sure to add all these items for your list so you can make the best fajitas:

Ingredients: 
1/2 c. Olive oil 
Taco Bell or McCormick Fajita Seasoning packet 
1 whole lemon 
Dash of Salt
Boneless skinless chicken breasts - 2 - 3 
3 bell peppers, thinly sliced
1 large onion, thinly sliced
Tortillas, for serving
Optional: shredded cheddar cheese or Mexican flavored shredded cheese

After you have your ingredients it’s important to follow these steps for fantastic fajitas!

Directions: 
  • Mix together the olive oil, lemon, salt and seasoning in a small bowl, about 30 minutes before you’re ready to start cooking. 
  • Remove the chicken from the refrigerator, cut it into thin strips (1/4 - 1/2 inch thick) and season it, using about half the mixture you just made.
  • In this time, cut up the peppers and onions and soak them in the rest of the mixture you created.
  • After 30 minutes heat up 2 skillets to medium heat on your stove, adding a little olive oil to each. 
  • Once the pans are warm, put the chicken in one and the vegetables in the other. Stir with a spatula as the pans cook. Cover the vegetables with a glass cover to help soften the veggies as they cook.
  • When you think the chicken is done cut a piece open with a knife. When white all the way through, pick out chicken and add to veggie pan. 
  • Place several tortillas on a plate and warm in microwave (30 seconds) and put on plate, ready to serve. 
  • Optional: add cheese (amount you like) to the vegetable pan. Let heat up for about 1 minute, just til cheese is melty. 
  • Open tortillas and fill with fajita mixture. 
  • Add any salsa or guacamole, as you see fit. 

That’s it! Fantastic fajitas for you!
